Tasty scrambled cheesy eggs with ham

Let me just start this out by saying this – I don't like eggs.

With that out of the way, lets get to the nitty gritty. Since starting this life change, roughly 8 months ago I have cleaned up my breakfast options. My go to breakfast used to be a sausage biscuit (sometimes two) from McDonald's. Today my go to breakfast is scrambled eggs with cheese and ham.

As I said, I'm not a fan of eggs but I'm growing to like them. I know they are a better choice for breakfast then anything heavy with carbs and I can say that I feel fuller and more mentally charged every morning I have eggs following my protein packed Bulletproof coffee. Below is the recipe I've been using:

  • 3 eggs
  • 1T of Almond milk
  • 28g shredded cheddar cheese (about 1/4 cup)
  • 60g Canadian bacon (about 2 breakfast sized slices)
  • 1T of Coconut Oil or Grass Fed Butter

  • Optional additions:
    • Pepper to taste

Measure out the ingredients, mix up the eggs and Almond milk. Add the cheddar cheese, stir well. Cut the Canadian bacon into small pieces (shoot for half inch squares), then add to the eggs, milk and cheese, stir well.

Heat a 9" skillet on low, add the coconut oil or grass fed butter. Once melted ensure skillet is greased sufficiently and then drain the excess off. Add the mixture to the skillet. With a fork (or utensil of your choice) stir the eggs as they cook. I keep the heat on low and cook them slowly, sure it takes longer but they come out tasting better and cleanup is minimized because they don't burn to the pan.

So that's a wrap, one addition I'm also considering would be to possibly add something like chia seeds. They are ridiculously tiny but have major health benefits.
